Buttercream Icing – for buttercream icing, you will need a half cup of solid vegetable shortening, a stick of margarine or butter that is softened, one teaspoon of vanilla extract, a pound of confectioner’s sugar and a couple of tablespoons of milk. This recipe can create three cups of buttercream icing. All you need to do is to cream together the shortening, vanilla extract and your butter in a bowl with the use of an electric mixer. You will then need to slowly incorporate your sugar one cup at a time. If your icing seems somewhat runny after all the sugar has been added in, you might need to add a bit more in order to get the consistency you need. If your icing is too stiff after mixing, incorporate the milk into the mixture and beat until you get the right consistency you want.
Cream Cheese Icing – another easy icing recipe you can use is the one that uses cream cheese as its base. For this recipe, you will need 2 eight-ounce packages of softened cream cheese, two sticks of softened unsalted butter, a tablespoon of milk and 8 cups of confectioner’s sugar. Much like buttercream icing, cream cheese icing starts off with the creaming together of both the butter and the cream cheese. Add the milk and then slowly add the sugar one cup at a time to this mixture. Continue adding the sugar and beating the mixture with an electric mixer until the desired consistency and smoothness is achieved.
Boiled Icing – this is another simple recipe of cake icing that you can easily do at home. What you will need for this recipe is a couple of cups of granulated sugar, 3 tablespoons of meringue powder, half a cup of cold water, a fourth of a cup of corn syrup and a half cup of room temperature water. Mix the meringue powder and the cold water in a bowl and beat this with an electric mixer until stiff. In a bowl in the microwave or in a pan on the stove, heat the sugar, half cup of water and corn syrup until it boils. Let this cool for a minute then slowly add this to your meringue mixture in a slow and steady stream while beating at the same time. This will make 8 cups of fluffy icing.
